O.M.A.D. = One Meal A Day

I’m doing One Meal A Day & a Smoothie to try to LEAN OUT.
This O.M.A.D was a SALMON dish with julienne sweet potatoes 🍠, kale 🥬, red onion 🧅, heirloom tomatoes 🍅, & peanut 🥜 sauce.
It was soooo yummy in my tummy
& seriously simple to make.
Like literally just chop the vegetables accordingly.
Add some butter 🧈 to a large skillet.
Brown the salmon.
Parboil the sweet potatoes 🍠 for 4-5 minutes
Steam sauté all the veggies.
Throw the peanut sauce ingredients in a blender
1/3 cup peanut or almond butter
1/4 cup tamari soy sauce
1/4 cup apple cider vinegar
1/2 cup water
1 inch peeled & chopped ginger
2 cloves garlic, peeled & chopped
1/2 teaspoon red pepper flakes
1 Tablespoon honey 🍯
Juice of one lime
….
Toss the warm veggies with the peanut sauce.
Top with salmon & ENJOY!
