Spring Rolls status post a Spring Cleaning in late Summer

Spring Rolls, like Spring Cleaning, are not just for Springtime anymore.
If you have a few spring roll wrappers lying around as I did, and some fresh ingredients, you too can wrap your own rolls… in Winter, Spring, Summer, or Fall, all seasons are perfect for SPRING ROLLS

The main tasks are:
1. Chopping veggies into tiny Spring Roll appropriate pieces & placing said ingredients in bowls a.k.a. Your Mise en Place (everything in its place)
2. Cooking your protein source by whatever method you deem appropriate
3. Blending the sauce ingredients appropriately
4. And finally, assembling the rolls by first soaking the wrappers in WARM WATER to make them soft & pliable, placing your wrapper on a moistened towel, to then placing the ingredients on one side of the wrapper, and then finally wrapping & rolling your ROLLS & tucking in the ends to seal in all the yummy freshness.
5. Lastly, eating each roll with a pinch of sauce for each bite.

To make the peanut sauce…
Throw the ingredients in a blender
* 1/3 cup peanut or almond butter
* 1/4 cup tamari soy sauce
* 1/4 cup apple cider vinegar
* 1/2 cup water
* 1 inch peeled & chopped ginger
* 2 cloves garlic, peeled & chopped
* 1/2 teaspoon red pepper flakes
* 1 Tablespoon honey 🍯
* Juice of one lime
