Clean Out Your Fridge Friday

On Friday, I woke up feeling ESPECIALLY MOTIVATED!!
Over the weekend my motivation waned.
It’s Monday & I’m trying to psych myself up again.
For anyone who struggles with making healthy living a “normal” part of your everyday life, the life we’re living NOW is anything but NORMAL.
Nonetheless, there’s no time like the present to give healthy living another go.
Eating healthy is not difficult for me.
Having a severe gluten intolerance & knowing the ramifications of not following said intolerance i.e. immediate & severe hives, an inhibited immune system, & potentially causing cancer & type 1 Diabetes, & just feeling bloody awful if I don’t adhere, are what keep me on track.
The same, kind of, goes for exercise.
Without near daily activity, I am so prone to stay prone (lying down) all day, that if I don’t exercise on most days, I can consider that day a wash.
The current state of things & ALL of the restrictions on what little pleasures I have, have, like many, put me in a rather down mood.
But I KNOW, from years & years of experience, that if I just get off my keister, I will feel enormously better.
Friday was such a great day!!
Here’s my cooking video to prove it!

On the menu…
chicken 🍗 legs & breast marinated in olive oil, lemon 🍋 juice, garlic 🧄, olive oil & salt 🧂 & pepper.
Sliced carrots, red & yellow peppers, & purple/red onions 🧅
Tossed with olive oil, ROSEMARY, salt & pepper.
Everything roasted on a baking sheet set on the top rack in the oven.
450 F / 232 C
For 40 minutes
Curried Kale 🥬 w/ red onion 🧅cranberries & curry (~1/4 tsp)
All chopped & heated w/ butter or olive oil in a skillet set on medium high to medium heat.
Plus a mint & parsley smoothie.
MUCH better than it sounds.
Handful of parsley, a bunch of mint leaves, 2 scoops protein powder, 1 T nutritional yeast, 1 T molasses, 2 T sunflower seeds, 1 cup soy milk & enough added water to help everything blend.
NUTRITION for smoothie
500 calories, 50g protein, 25g carbs, 7g fiber, 15g Fat
