Chicken Piccata sans Capers but with Pickled onions instead

It works. I swear.
So, it seems my M.O. is to call any chicken dish with lemon ๐Ÿ‹ โ€œChicken Piccataโ€
However, unlike the last time I made a pseudo piccata, this time I did not try to thicken the sauce. I donโ€™t like thickening sauces except by default via a reduction.
For this chicken piccata version, I definitely did not have capers & I did not care. Without capers, I had an excuse to use my noggin while also teaching you how to make pickled onions.
Pretty simple actually.
Bring a liโ€™l pickle juice to a boil.
Add diced onions. Turn off the heat. Do other things. Check back when youโ€™re done with your other things. Youโ€™ll have pickled onions. I promise.
Some โ€œother thingsโ€ include, but are not limited to: pounding the chicken, sprinkling it with salt & pepper, browning the chicken in butter, adding chopped mushrooms, adding the juice & โ€œmeatโ€ of one or two lemons ๐Ÿ‹ Adding chopped broccoli ๐Ÿฅฆ Adding the pickled onions. Adding the cooked rice to reheat. Tasting your ensemble whilst patting yourself on the back. GREAT JOB!!
