THREE Recipes Under 10 MINUTES

Three Recipes:
Chicken Burgers 🍗 🍔
Broccoli 🥦 Apple 🍎 salad 🥗
Orange 🍊 Red Onion 🧅 Salad 🥗

Chicken Burgers:
Chicken🍗thighs poached in green tea
1 cup cooked (leftover) rice 🍚
2-3 Shiitake mushrooms, chopped
1/4 red onion, chopped
1 egg 🥚
1/4 tsp black pepper
1/8 tsp red pepper flakes 🌶
1/8 tsp sea salt 🧂

Poach chicken in tea 🍵 until done ~15 minutes. Sauté onion 🧅 & mushrooms 🍄 in butter 🧈 until browned. Chop chicken 🍗 & add to food processor. Add mushrooms 🍄 onions 🧅 & cooked rice.
Add egg, pepper, red pepper flakes & sea salt. Pulse to combine ingredients. Heat a skillet on medium-high heat (4 o’clock) Add butter or oil to skillet. Use clean hands to form small patties, ~1/3 cup each. Place in skillet to brown. Flip after 8 minutes. Cool another 8 minutes until browned. Serve with salads

Broccoli 🥦 & Apple 🍎 salad with
Nut & Seed Brittle
Preheat oven 375F / 190C
Handful each of whatever you have on hand. I used Walnuts, Sunflower seeds, & Pumpkin seeds, chopped
1 Tablespoon wild local honey 🍯
Dash sea salt
Place on parchment paper on baking tray in 375 degree oven for 10 minutes, until edges brown.

Broccoli Salad
1 small head broccoli plus the stem, chopped, bite size
1 apple, small to medium diced
2 Tablespoons red onion, small chopped or thin slivers
Dressing:
Dollop of Mayo
1-2 Tbsps Apple cider vinegar
Dash cayenne
1/8 tsp Sea salt
1/4 tsp Black pepper
Mix dressing in a large bowl. Add chopped broccoli, apple & onion. As you serve, top with crumbled nut brittle.

Orange 🍊 Red Onion 🧅 Salad 🥗
2 Tbsps thinly sliced red onion
1 orange, peeled, sectioned & cut into triangles
Optional: 1-2 Tbsps chopped parsley, mint or dill
Dressing:
1-2 Tbsps Olive oil
1-2 Tbsps Apple cider vinegar
Dash Sea salt
Dash Black pepper
Mix dressing in a medium bowl. Add onion while you chop orange. Adding the onion first will lessen their bite. Add orange pieces. Enjoy!!
